Homemade Tomato Soup Recipe

Making your own homemade tomato soup is incredibly easy. This recipe works best if you have a food processor or power blender like a BlendTec. You can use any blender if you like some texture, or go to the trouble to scald tomatoes, peel and then cook them. Alternatively, you can seive the pureed tomatoes at the end, but that is more work than I am willing to put in. I actually like having a bit of texture to my tomato soup as well. Toast up some fresh bread and settle in with your warm tomato soup. If you add a bit of lemon juice or vinegar, you can safely water-bath can this soup for winter consumption or freeze it for later use. If you are water-bath canning, just follow the directions for adding acid to tomato sauce and process the same way.

Be sure to start with really flavorful tomatoes. They need to be really juicy ripe. Pale pink, waxy tomatoes are a total waste of time.

Start with:

* 3-4 pounds of ripe tomatoes, peel if desired. I don’t.
* 1/2 teaspoon salt
* 1/4 teaspoon pepper, optional

Blend or process the tomatoes until smooth. If you like texture, leave some bits unblended. If you like super smooth soup, blend until it is totally smooth.

Heat in a large pan until simmering, add salt and pepper. Simmer until slightly reduced in volume, about 20 minutes. The thicker it gets, the stronger the flavor. Taste it from time to time. Stir occasionally to be sure it does not scorch. Serve when you like the texture and taste. If the tomatoes are too acidic, you can add a pinch of sugar or baking soda.

When canning, I make up a stock pot full of pureed tomatoes and start cooking them down. When it looks like soup, I pull out a cannerload of jars and fill them with tomato soup. While those are processing, I keep cooking the tomato puree down. When it as thick as I like my tomato sauce, I do a cannerload of tomato sauce. Finally, if there is enough left, I cook the remainder down to make pizza sauce. I add in basil, oregano and a dash of hot pepper flakes for pizza sauce or spicy tomato soup.
